It works according to the principle of expansion and contraction of gases, in this case water vapor.:
The water is heated in the lower container of the kettler by a small burner. When the water produces enough steam, it pushes the hot water up the glass tube into the upper container, where it meets the ground coffee and is extracted. Once the water has risen, the burner is turned off and the immediate effect is the condensation of the water vapor in the lower container, forming a partial vacuum that sucks the coffee drink. This passes through the paper and metal filter, which is in charge of eliminating any type of sediment, and is completely contained in the lower balloon.
This production method, invented around 1830 in Germany by LOEFF of Berlin, reached its peak in the early 20th century, although it later fell into disuse. This production method, invented around 1830 in Germany by LOEFF of Berlin, reached its peak in the early 20th century, although it later fell into disuse. It was not until well into the first decade of the 21st century that its interest was reborn in the hands of specialty coffee, mainly in Asia and from there it has spread to North America and Europe.
This coffee machine is also known by the name of CONA kettler, because that was the name of the main and best-known manufacturer of this type of coffee maker in the 20th century.
